The work of the Lab systèmes alimentaires

Launched in May 2023 in co-direction with the CERIEC of the ÉTS (Centre d’études et de recherches intersectorielles en économie circulaire), the Food Systems Lab is a collaborative innovation space set up to bring together stakeholders in Quebec’s food systems with the aim of co-developing structuring solutions for the circular economy*. These solutions aim to reduce food waste, limit environmental impact and preserve resources, while strengthening the solidity of the Quebec supply chain.

*Quebec definition of circular economy: System of production, exchange and consumption aimed at [first reducing and then optimising] the use of resources at all stages of the life cycle of a good or service, in a circular logic, while reducing the environmental footprint and contributing to the well-being of individuals and communities (Source: Adapted from the definition of the Pôle québécois de la concertation sur l’économie circulaire).

The Lab is funded in part by the Government of Canada, through the Investment Readiness Program (IPP) run by the Chantier de l’économie sociale, and by the Ministère de l’Agriculture, des Pêcheries et de l’Alimentation (MAPAQ). Researchers are supported by the Pôle bioalimentaire of Université Laval’s Institut sur la nutrition et les aliments fonctionnels (INAF), thanks to the Fonds de recherche du Québec.

Food waste between retail distribution and consumption

La Transformerie has collaborated with UQAM’s Ecological Transition Research Chair to explore the issue of food waste in retail outlets and households. Find out more about the results of this study, which sheds light on the dynamics between food retailing and consumption, and identifies ways in which we can take more effective action to tackle this major challenge.
