Our history

It all started with a daring challenge to chef Guillaume Cantin : to prepare a gourmet meal using food recycled from grocery shop containers. The experiment revealed a surprising reality : the quality of discarded food.

This experience sowed the seeds of La Transformerie, officially founded on 17 July 2017 with Bobby, Marie and Thibault. Together, the 4 friends from the food industry decided to take action against food waste by devoting all their energies to developing the organisation

Les Rescapés are homemade spreads made from fruit salvaged from grocers in Rosemont-La Petite-Patrie. Combining a circular economy with culinary know-how, they offer a gourmet solution while raising awareness of the issues surrounding food waste.

Behind each jar is a community of dedicated volunteers who give their time and energy to bring the project to life!

Despite the emergence of numerous projects to reduce waste, efforts remain scattered. The need to bring players together to develop structuring actions that go beyond individual initiatives led to the creation of the Lab. This innovation space is dedicated to circular economy solutions for reducing food waste across Quebec.

Building on the expertise acquired with the Rescapés project, La Transformerie has set up a support service for food retail and HRI companies to reduce their waste and financial losses.

With the aim of multiplying efforts to reduce food waste, the Rescapés+ programme has been designed to form alliances with emergency food agencies. By pooling their strengths and optimising their operations, these organisations will be able to develop their own revenues and ensure their long-term survival.

Guillaume is the 1st winner of Radio-Canada’s Les Chefs! show. He has been immersed in the food industry for 25 years, initiating numerous projects and having already set up his own company to help organisations develop food products. Today, he is putting his talent to work to reduce waste and put an end to this problem.

Élise 
Corneau-Gauvin

Manager – Support services and Lab food systems Lab systèmes alimentaires

On maternity leave.

For more than 10 years, Élise has navigated her way through various management roles in food organisations from different backgrounds, including the role of co-director of the Réseau Alimentaire de l’Est de Montréal. She also holds a certificate in the management and socio-cultural practices of gastronomy.

Patrick Lopez

Head of Advocacy and Strategic Commmunications

With a master’s degree in geography and a background in project management and international relations, Patrick has worked within high-impact social organisations for over a decade. With expertise in strategic communications and partnership development, he has facilitated innovative and inclusive initiatives, notably during his tenure at the Olo Foundation. Patrick is particularly interested in how storytelling, partnerships, and public policies contribute to a sustainable transformation of our systems, especially in the realms of food and environment. 

Luc Tremblay

Senior Consultant on food waste reduction – Perte Zéro

Drawing on his extensive experience in management and organisational support, and with a keen awareness of food waste issues, Luc will play a key role in developing our Perte Zero advisory service. He will support our clients in preventing waste, transforming their practices, and creating concret, measurable solutions.

Léo-Frédérik Leroux

Head of Operations and Volunteer Activities – Projet Rescapés

Léo-Frédérik has solid experience in logistics coordination, volunteer management, and field organization. With an excellent sense of anticipation and rigorous follow-up of operations, he aims to create a collaborative and supportive work environment. Whether managing concrete tasks or doing physical work, Léo-Frédérik always finds satisfaction in working in the field.

Julian Lainé

Production Manager – Projet Rescapés

With 16 years of experience in the restaurant industry, including several as a chef, I have seen firsthand the extent of this problem. This experience has led me to devote myself fully to a meaningful mission, where I can use my skills to develop concrete and responsible solutions.

Thomas Peladan

Consultant on Food Waste Reduction – Perte Zéro

With a background in sustainable consulting, Thomas has supported organisations for over four years in implementing environmental practices: carbon footprints, sustainability plans, awareness workshops. Today, he brings his expertise to the Perte Zéro practice, grounded in hands-on action. His strong interpersonal skills and facilitation abilities enable him to engage with teams and turn every project into a collective and engaging endeavour. 

Nina Widart

Programm Lead – Lab Systèmes Alimentaires

Nina has gained experiences accross various rolesin the food industry and commercial catering. Driven by a strong commitment to social values, she transitioned into the community sector, contributing to food security projects. She now aims to bring her expertise in project management and her vision on the future of food systems to La Transformerie. 

Tabatha Sedano

Adjointe administrative

After more than ten years coordinating projects and teams in audiovisual production, Tabatha now puts her organizational skills and interpersonal skills to work at La Transformerie. Personally involved in volunteer initiatives related to the environment, her values naturally led her to La Transformerie. Her ability to structure and her administrative rigor provide the necessary support to the team on a daily basis.

A year rich in the deployment of Transformerie’s activities. We launched Perte Zéro, a consulting service adopted by companies like Hydro-Québec to reduce food waste. More than 30,000 kg of food were saved and transformed into 18,000 Rescapés jars. And much more besides…
