Our history

It all started with a daring challenge to chef Guillaume Cantin : to prepare a gourmet meal using food recycled from grocery shop containers. The experiment revealed a surprising reality : the quality of discarded food.

This experience sowed the seeds of La Transformerie, officially founded on 17 July 2017 with Bobby, Marie and Thibault. Together, the 4 friends from the food industry decided to take action against food waste by devoting all their energies to developing the organisation

Les Rescapés are homemade spreads made from fruit salvaged from grocers in Rosemont-La Petite-Patrie. Combining a circular economy with culinary know-how, they offer a gourmet solution while raising awareness of the issues surrounding food waste.

Behind each jar is a community of dedicated volunteers who give their time and energy to bring the project to life!

Despite the emergence of numerous projects to reduce waste, efforts remain scattered. The need to bring players together to develop structuring actions that go beyond individual initiatives led to the creation of the Lab. This innovation space is dedicated to circular economy solutions for reducing food waste across Quebec.

Building on the expertise acquired with the Rescapés project, La Transformerie has set up a support service for food retail and HRI companies to reduce their waste and financial losses.

With the aim of multiplying efforts to reduce food waste, the Rescapés+ programme has been designed to form alliances with emergency food agencies. By pooling their strengths and optimising their operations, these organisations will be able to develop their own revenues and ensure their long-term survival.

Guillaume is the 1st winner of Radio-Canada’s Les Chefs! show. He has been immersed in the food industry for 25 years, initiating numerous projects and having already set up his own company to help organisations develop food products. Today, he is putting his talent to work to reduce waste and put an end to this problem.

Florence-Léa 
Siry

Advisor on reducing food waste – Perte Zéro

Florence-Léa Siry worked as a canteen and caterer in the events sector for 17 years before devoting herself to popular education. Since then, she has been raising public awareness of sustainable food issues, notably through conferences. The author of seven books, she joined La Transformerie in 2025 to help food organisations implement strategies to eliminate food waste. Her expertise is widely recognised, enabling her to propose practical solutions to improve food practices.

Manager – Support services and Lab food systems Lab systèmes alimentaires

For more than 10 years, Élise has navigated her way through various management roles in food organisations from different backgrounds, including the role of co-director of the Réseau Alimentaire de l’Est de Montréal. She also holds a certificate in the management and socio-cultural practices of gastronomy.

Maria Stalinski

Head of Operations and Volunteer Activities – Projet Rescapés

Maria has been playing a central role for over 2 years, and has a number of strings to her bow, including team coordination, communications, volunteer mobilisation, process optimisation and team building. With a background in political science, she is also in charge of awareness-raising and advocacy to accelerate the reduction of food waste.

Shirley Wagner

Production Manager – Projet Rescapés

Operational pillar of the Rescapés project. Shirley has extensive experience as an executive chef in various health establishments. On a day-to-day basis, she looks after logistics, the kitchen and volunteer activities.

Rémi is responsible for collecting and sorting the unsold goods donated by our partners and carried out by our volunteers.

Clémence, who has a degree in agronomy, provides us with invaluable support, both in representing us at events and in communications.

A year rich in the deployment of Transformerie’s activities. We launched Perte Zéro, a consulting service adopted by companies like Hydro-Québec to reduce food waste. More than 30,000 kg of food were saved and transformed into 18,000 Rescapés jars. And much more besides…
